Bao Brothers began as a pop-up market stall in Newcastle, and has grown to two food trucks, After Dark and a flagship store in Charlestown.

Our ingredients

Inspired by contemporary Asian flavours, we want each mouthful to be in your face full of flavour. Think braised pork with pickled cucumber, hoisin, kewpie mayo, coriander and a generous assault of peanut praline and you've got yourself a face-full. We mix it up monthly in with Bao Burger and Loaded Fries specials.

At Charlestown you'll experience our popular house-made sodas, with flavour hits of mandarin, ginger and kaffir lime, and yuzu and passionfruit. We're also fully licensed - stocking Garage Project, or come in for our custom cocktails.

About the owners

The original Bao Brothers - Dave Griffin and Nathan Martin - started the Bao Brothers business in Newcastle 2015. From humble beginnings as a market stall, the business has grown to food trucks slinging Bao's at national music events, weddings and food and wine festivals, a Hunter Street offering and a flagship store in Charlestown. With a philosophy of good food fast and constant experimentation with flavours and textures, there's never a dull moment.
